The Windows Server Catalog (Microsoft Web site) is the best place to start.  As noted on the site:

The Windows Server Catalog lists thousands of hardware and software items compatible with the Microsoft Windows Server 2008 R2, Windows Server 2008 and Windows Server 2003 operating systems. In addition, products may also be compatible with other versions of Microsoft Windows as shown in each product details page.

Also included is information (from WindowsServerCatalog.com) about running virtualization products other than Hyper-V:

To improve customers' support experiences when running Windows Server on virtualization technologies other than Hyper-V™ and Virtual Server, Microsoft has launched the Server Virtualization Validation Program (SVVP).
