This issue is "By Design". The reason is that the Profile Settings only configure the Profile.
 
The Forum Settings only configure the Forum. The Alerts email is specific to the Forum.

The social tools team has another three social apps to consider: Wiki, Blog, and Gallery. Each has their own settings. While it's possible to combine all the Settings that are similar (such as email) into the Profile Settings, it would be a resource-intense solution. The reason is because each app is an independent platform pieced together from multiple sources and often requires support by multiple, individual vendors. 

However, the solution to change your Alert email settings is to just click "My Settings" on the upper right of your forum links (visible when in the forums). In the Configure Alerts section, you can turn the alerts off, and you can change your email that the alerts are sent to.
