Under the line “<isLibraryPinned>true</isLibraryPinned>”, add the following line: <iconReference>shell32.dll,96</iconReference> Here you can specify a file with the icon you desire to represent this library.
Script example: copy \\domain\netlogon\Library name*.* %appdata%\Roaming\Microsoft\Windows\Libraries

Is it possible using a similar method to delete all the libraries that point to the 'public' folders?
@BenBinskin: If you want to search all libraries that are on the local machine and only remove the ones pointing to the bublic folder, that's something I haven't tried before. However, you could hide specific libraries of which I've writen a blog post about: jeffwouters.nl/.../howto-hide-the-libraries-in-windows-7-or-server
